School’s Out For the Summer!

You just sang that title, didn’t you?

Wednesday was Hadley’s last day of preschool. I suppose bittersweet is a good word to use for it, I am just so in love with the age she is at right now. My mom always told me I would love every age even more than the last, and it is hard to imagine, but so far it has been true. Truett as well, he is so much fun right now, and hilarious! Either way, I’m not ready for her to keep growing up. Not ready for pre-k, or a 4th birthday party… So for summer we will just live it up!

I also got to go have my car checked out from that ridiculous hail storm a few weeks ago. It did make some fantastic dents all over my sweet little Saab, so Wednesday after the gym I was feeding Truett all kinds of goodies to keep him composed while he should be napping. He is super shy around strangers at the moment (even though they did give him a State Farm Neigh Bear), so he wouldn’t talk at all while the guy was walking around my car inspecting every square inch. I especially liked hearing about the baseball sized dent in the roof, that stretched the metal and would need a little extra work. Basically, my car was pummled.

The other night, for whatever reason, Brent was craving Green Chile Stew. I was not prepared to make that but I did have some ground turkey thawed, so I whipped up a yummy version of it. Ground turkey, onions, garlic, carrots, celery, okra, and tomatoes. Normally okra would not even be in Green Chile Stew, especially since Brent didn’t even know what okra was until we started dating. Isn’t that crazy? He loves it now, and I really think it works in the stew. I added lots of different seasonings and of course, I made cauliflower tacos. I changed it up a little this time and cut out one of the eggs, as well as added in some taco seasoning. They tasted great! Let me tell you that I was fully expecting both kids to not eat the stew. Hadley has a weird thing about textures, besides hating carrots, and Truett, well, he just does whatever she does. So I had some yummy turkey hot dogs waiting to be cooked, just in case. Instead, they both had two bowlfuls and a tortilla each! I was shocked. Brent also refilled his bowl once (or twice), and I thought it was good too. But it was the first time either one of them really ate it. And Hadley all of the sudden kept telling my that carrots were her favorite. Um, what? Needless to say, I was pretty proud of myself! And there is just enough left for maybe one bowl for lunch today.

All of Brent’s classes were over as of yesterday (Thank the Lord!) which means he has a little break before summer classes start. This guy means business. This morning we are going to ballet and the gym before grabbing a few things at our local Sprouts for the weekend. My mom is driving up after work, and Brent’s mom and Aunt are flying in later tonight, as well as his sister coming in tomorrow. Hadley’s ballet recital is Sunday afternoon, and no one wants to miss it! It is going to be stinkin adorable, I’m sure. It will be a busy weekend but a fun one to be sure.

Healthy Kids and Cauliflower Tacos!!

It is so nice to have my little man healthy again! Last week was so rough, I spent every minute that he wasn’t attached to me either sleeping or cleaning/disinfecting the house. He had a little fever starting last Monday, and didn’t sleep well at all that night, which is not like him. Tuesday was spent with him being really whiny and clingy and we didnt go to the gym because he still had a fever. In fact, I didn’t make it to the gym all week last week. Truett was awake for hours every night crying and rolling around trying to get comfortable. I took him to the pediatrician on Wednesday (after his fever got up to 104.5 on Tuesday night) and discovered he had strep and an ear infection. Yuck. We started antiobiotics and he felt awful until about Friday, and Saturday night he finally stayed in his bed and slept all night. It was the best Mother’s Day present I could have gotten after a week of hardly any sleep!! I scrubbed the house and washed all the bedding, and thankfully no one else has gotten sick. That is a miracle, I must say.

Of course it was also a week where Brent had jury duty every day, and could not be late or take a day off to help me like he normally could. A guy was even arrested and held in contempt for being late twice! Needless to say Brent was always early. It was just a crazy week, and I kept hoping we would make it to Texas for Mother’s Day and a baby shower, but we decided late Friday night that it would be best to just stay here, and plan another trip for a long weekend.

Since we were home I needed to get dinner made, so I whipped up tacos for dinner. I really wanted to try the cauliflower soft taco recipe that my cousin had shared with me, so I did that too. I was very very surprised at how easy it was, and how great they tasted! Not like cauliflower at all. This coming from a person who makes homemade tortillas (or used too) and the cauliflower pizza crust. These were so easy! I will probably alter my crust recipe and/or make it small like these to make little personal pizzas with all different toppings. Here is the original recipe that I used and it made about 6 decent sized tortillas.

They held together just as good as my homemade flour tortillas, and better than store bought. I will definitely be making these from now on for mexican food! Brent liked them too!

We also were lucky enough to have a friend of a friend looking to get rid of a train table, and we got it!

Truett was SO excited! He has barely left the table since then.

Saturday was our neighbor’s little boy’s first birthday, golf themed, and it was adorable. The kids had a great time and after their naps they went back across the street for dinner and some playtime while Brent and I had a much needed night out. I love that we can trade off babysitting with our neighbors. Our kids love each other! And we are all transplants here with no family nearby, so we have taken up that role for each other.

Mother’s Day was great too, we went to church and then out to the new house which is coming together! All of the exterior plywood is up so we could walk through and see the rooms and all that. I plan on going back out today to see what else is done. After the kids took naps we went shopping, and I got some great new summer clothes! Much needed, as nothing from last year fits very well. I am in the single digits in pants, and everything else is a small, so thats pretty amazing. Then we went to my very favorite restaurant for dinner, Flatire! Yes, a burger place, but they have a pretty insane salad and it is just a great place to go. I have a feeling we will go again this weekend when our family is in town. It topped off a pretty great weekend, and I am one lucky girl!

This week is Hadley’s last week of school, Brent has finals, and on Friday my mom, Brent’s mom and his aunt are all coming in town to visit for Hadley’s ballet recital on Sunday! It is going to be the cutest thing ever!!

Back at the gym this week too, yesterday was legs and man my hamstrings are sore today!! Looking forward to my workout today!

Weekend Recap and Birthday Cake Oreo Rice Krispies

Another busy weekend down, another to follow in a few days. It was a lot of fun too. We spent practically the whole weekend with friends, doing different activities and unfortunately, being very cold. It is May, and here in Oklahoma, this is record setting weather. One of the places we went this weekend was the Art Festival, and it was so chilly! Last year at the festival we were all fighting for shade, and I remember trying to keep the sun off of Truett and wanting to leave because it was just so stinkin hot. It was a nice change to be cool, but I’m so ready for some pool time. Even the birthday party we went to over the weekend was cut short because of the weather. It was outside at the park, and the wind was blowing so hard out of the north that most people left after the cake. That didn’t stop the kids from having a blast, they chased each other around wearing Ninja Turtles masks and fighting with pool noodles. And Brent hasn’t stopped talking about what good candy Claire chose for the goodie bags. I’m sure you can guess he has ransacked both of the kids bags, and Truett will be lucky if he sees another piece!

Church was another awesome message, as always. The series we are in is about what we need to do to have a blessed home. How we can be more than just called a “christian” family, but become a “christ-centered” home. Too many people call themselves christians but don’t live like it. We need to raise our children with pure hearts and high morals. It may be hard in this society, but I will do all I can.

A nice surprise this weekend was driving out to our lot and seeing that they had started framing the house!! They weren’t going to do that until this week, but I was very happy to see that they are trying to make up some of that time we lost with all the rain.

At Hadley’s school today, they are celebrating her birthday! Even though her birthday isn’t until July, her teacher has a special day for all of the kids with summer birthdays. I love that idea, and I had never thought about it until I had a kid with a summer birthday! Her teacher asked if I could bring something other than cupcakes, that they were cupcaked-out from all the other moms. So I was trying to think of something creative, where I could sneak something healthy into the kids treat, and of course I turned to Pinterest. I first decided on bananas dipped in chocolate and rolled in sprinkles. Sunday afternoon I started thinking about how the bananas might turn brown, or turn too soft before the kids got to eat them, and I didn’t have time to make them this morning. So I started talking to Brent and looking on Pinterest, yes again…  We saw a recipe for Funfetti Oreo and Rice Krispie Treats. SOLD! And this recipe had white chocolate drizzled on top with more sprinkles. I mean, come on. I know I like to eat healthy, but these are too good to pass up! So I ran to the store and grabbed what I needed and made them while Brent gave the kids a bath after dinner. I had to use my once monthly bath pass, for whatever reason it stresses Brent out to give the kids their bath. I love it, it is relaxing and I know it is winding them down for bedtime. When the kids were babies, you couldnt pay him to do their bath. Maybe its just a mom thing?

Dinner was so good, by the way. We had some leftover steaks, so I riced some cauliflower, cut up some bell peppers, and made a burrito bowl of sorts. Cheese, salsa, and sour cream is all I need to make anything delicious.

Back to the treats. I made the recipe just as stated here., and they turned out perfectly delicious. The only thing I had to do was add a little vegetable oil to the white chocolate, because the cake mix made it too thick to drizzle.

Birthday Oreo Rice Krispie Treats

6 TBSP unsalted butter
1 16-ounce bag of mini marshmallows
12 ounces Rice Krispies Cereal
1 package Birthday Oreos, chopped into pieces
1 tsp. vanilla extract
6 ounces white chocolate
1/3 cup Funfetti Cake Mix
Sprinkles

Melt butter in a large saucepan over low heat and add marshmallows and vanilla.

Stir until they begin to melt.

When melted stir in cereal and cookies so it they are completely coated with marshmallow mixture.

Did you know these existed?? I did not and they are amazing!!

Press into a baking dish (9 by 13…but you need tall sides).

Melt white chocolate in a double boiler, when melted mix in the cake batter and drizzle over the pan. Add extra sprinkles so they stick to the white chocolate mixture.

Let sit for about 30 minutes before cutting.

I loaded UP on the sprinkles. Who doesn’t always want extra sprinkles on their anything? So much for sneaking in a healthy snack, but after all its her ‘birthday’ treat at school.

Lots of things to get done today and tomorrow! It is also dog treat day for Mox and I think he knows it!! Off I go!


Busy Days! Go Thunder!!

What a busy week it has been already! Yesterday after the gym and naps I took our dog up to the vet for his exam and yearly vaccinations. Don’t skip a year people! It is important to keep your pet healthy!! And if you need a vet in Edmond or Oklahoma City, Stoneridge Animal Hospital is the place you need to be. They have every up to date piece of equipment and an amazing staff! I might be a little biased, but I love’em!
Then I came home and started the charcoal on the grill – all by myself – for the first time.  I did it once before, but it never got going. So I was pretty proud of myself for it working! Brent grilled some steaks I ha d been marinating all day in worschestchire and onions. I also broiled some asparagus and onions and sprinkled blue cheese crumbles all over the top!

Meat and veggies is always low carb!! Plus its delicious and healthy. We ate and gave the kids baths, and after they went to bed, Brent and I got to crackin on his homework. His finals are coming up so I have been helping him get his study guides done since he has been so busy at work. I am learning more about chemistry than I ever wanted to. I promise I will never need to know 98% of that in the future.
Today I dropped Hadley off at school, I am at the gym, and after I pick her up I have to run to the city to meet Brent. Then home to play and feed the kids while he has class. And our sweet little neighbor gets to come hang out with us while her parents go to the Thunder game! A little jealous, but I will be watching every minute of it from home!

Tomorrow is going to be cold here again, which makes no sense to me and I am totally over it!! The pool in our neighborhood is never going to get warm enough to use by Memorial Day at this rate! Brent and I are also going to a jazz concert tomorrow night for his Music Appreciation class. Pretty sure we will have to hit up Vin Dolce on our way home!

Weekend Recap and Caprese Stuffed Chicken

We had a really fun weekend, and I wish we had one more day!! Especially since today is the nicest day of the year we have had yet!! Friday night was Hadley’s performance at the baseball game in downtown, and it was so so adorable! I took a video on my mom’s camera, so when she emails it to me I’ll try to post a snippet.

Saturday we went out to the lot to check it out and show my mom’s fiance the house, which he hadn’t seen yet. Came home for lunch, put the kids down for naps and Brent and I went to the gym for a quick workout. When we got home we started prepping for dinner because we had invited some friends over to eat. I wanted to make a recipe I saw on Iowa Girl Eats called Caprese Stuffed Chicken. It was so easy to make a bunch of these, and they turned out delicious! Here is the link to the original recipe.

Ingredients:
1 Tablespoon extra virgin olive oil
1 small onion, chopped
salt & pepper
2 garlic cloves, minced
6 cups baby spinach
4 chicken breasts, pounded very thin
2 vine-ripened tomatoes, sliced
4oz mozzarella cheese, sliced
1/2 cup fresh basil leaves

Directions:

  1. Preheat oven to 400 degrees then line a sheet with with foil, spray with nonstick spray and then set aside.
  2. Heat oil in a large skillet over medium heat then add onion, season with salt and pepper, and then saute until translucent, 3-4 minutes. Add garlic then saute for 30 more seconds. Add spinach then cook just until wilted, 2-3 minutes. Set aside to cool slightly.
  3. Brush and season both sides of the pounded chicken breasts with extra virgin olive oil, salt, and pepper. Mound 1/4 of the spinach mixture on one end of the chicken breasts, then layer on sliced tomatoes, mozzarella cheese, and fresh basil. Drizzle with extra virgin olive oil then sprinkle with a bit more salt and pepper. Fold other end of chicken over and secure with a toothpick. Place onto prepared baking sheet then bake for 15 minutes, or until cooked all the way through.

I doubled the recipe, and it went together quickly and easily. Perfect for a large group! And who doesn’t like caprese salad? It’s delicious. I wanted to make a basalmic reduction to go over it, but totally forgot. Next time! We actually have two leftover and I was going to heat them up for dinner tonight, so maybe I’ll do it tonight.

The friends that came over made some really yummy gluten free mint brownies. I’ll be sure and get her recipe!! They were soft and chewy, I don’t know why I haven’t thought to put peppermint extract in my brownies before! I really liked it.

Sunday we went to church and then met up with some friends and tried to go to the racetrack to watch some races, but it was so crowded we headed across the street to the zoo. We caught the Sea Lion Show, which is always my favorite, and made a quick trip over to see the lions and watch the bears have lunch. It was fun, and I always love getting to spend time with my friends and their kids.

Today was back to the grind for Brent, and Hadley had school. Truett and I headed to the gym and then home for lunch, now he’s napping and I’m going to get cleaned up to pick up Miss Hadley and run a couple of errands. I started a new strength training program last week, and it lasts for 12 weeks. I’m excited about it, I think it will be easy to stick to, but the workouts are tough! Although I do feel great afterwards. It came with meal plans and grocery lists which make it really easy for me. It is Jamie Eason’s LiveFit Plan and it is free online.

How many more days til Friday?? Haha.


Finally Friday and Pacifier Free (Almost!)

It’s Friday!! I’m SO glad it’s Friday. My mom and her fiance will be up this afternoon, Brent is at a clay shooting tournament today (he needs to go shoot some guns and de-stress!!), Hadley has ballet this morning and then her performance at the baseball game tonight.

Yesterday was one of those days. It was going relatively well, I had my usual sense of being overwhelmed and having lots to do. So when I went to the grocery store, things were going ok. But by the end of it the kids were getting restless and Tru kept trying to climb out of the cart. So I was hurrying, and totally forgot to grab the rotisserie chicken that we were going to have for dinner. I realized it in the parking lot, as I was buckling the kids in their seats. So last night for dinner they had turkey hot dogs with Annie’s Mac ‘n Cheese, and I had leftovers and opened a can of greens, much to Hadley’s delight. Not the super nutritious dinner I had originally planned, but there was no way I was going back in the store. And yes, she does like greens. She had two helpings of them with her dinner.

This has been a rough week, mostly because Brent has been working late or had class after work every night this week. I am looking forward to finally getting to see him this weekend. I even woke up with him at 6 this morning to make his breakfast and iron his shirt for the tournament today. At least that’s what I told him, but really, I just wanted to spend some time with him. So now he’s left, and I’m on my second cup of coffee while I wait for the kids to wake up.

After ballet and a quick workout this morning, Hadley has a hair appointment – her second ever! Her last one was in December of 2011. She wants her hair long, but it is in desperate need of a trim. Then we will come home for lunch and naps, while I finish getting the house clean and get ready for the game tonight. I have to get Hadley dressed and her makeup on, which she couldn’t be more excited about. She is all girl, I tell ya. Loves doing her nails and playing with makeup. Which I sure love!!

This weekend we don’t have anything too crazy happening, just spending time with Nana and Big Daddy, running to the farmers market, and out to the lot. Church on Sunday and seeing friends in the afternoon. I’m making a Caprese Stuffed Chicken for dinner one night, so that should be delicious. And a friend of mine sent me  a bunch of new “Sinless Sweets” to try. Needless to say I am super excited.

We are on Day 5 of Truett not having his pacifier during the day. He still gets it when he is in bed, however. This is mostly so I get a full night of sleep! The mornings are a little testy, because he tries to trick us into letting him have it. But I have held strong, and he is doing just fine. When we took Hadley’s away I cut the end off and told her the dog ate it. She was pretty ok with it and it really only took one night for her to get over it. But she was also two and a half. Truett is 18 months, but he is getting this redness around his mouth that he acts like is uncomfortable, so I decided we needed to get rid of his beloved paci. After two days, it was all cleared up and back to normal. The good thing is, he will still get to keep his lovie when I finally do cut his up too. And there he is! I love how he lays in his bed saying every name he knows, and sometimes he moves on to saying all the words he knows too. It sounds like he has moved on to “He-yo! Mommy! YoHoHo!” Thank you Disney Junior, for turning my little man into a the cutest pirate ever!

Update: Better Peanut Butter Cookies

Yesterday while my kids were napping, I picked up the house and cleaned the kitchen, changed the laundry, took a quick shower and still had a few minutes. So I wanted to remake the Peanut Butter cookies I made last week, and try something different with them. I made the recipe exactly the same, and then added in two scoops of my vanilla protein powder. Rolled them into balls, pressed them with a fork, and popped them in the oven for 10 minutes. What came out was even better than I expected. These have a really rich flavor, and a better texture than the first batch. PBcookie1

I sent a picture of them to Brent and told him that they were waiting for him at home, and he was pretty excited. So he tried one when he walked in and immediately asked me what was different. I was afraid he didn’t like them, but he said they were so so much better than the others, which he didn’t think was possible. I think he has already had 5 or so. The nutrition information didn’t change too much, my batch made about 45 cookies.

About this size. 75 calories, 1.5 carbs, and 2.5g of Protein per cookie. Not bad, and they taste so stinkin good.

Ingredients:

  • 1 cup peanut butter
  • 1 cup xylitol
  • 1 egg
  • 2 scoops protein powder of choice

Directions: Mix everything together, roll into balls and place on lined baking sheet. Press with fork to make the cross marks, and bake for 10 minutes at 350. Let them cool completely on baking sheet before moving them. Then set them out for a few hours or overnight to firm up. These are fragile and need to dry out a little so they aren’t so crumbly. Feel free to eat a few right out of the oven.

Today is my grocery store day, so I have my menu and list all worked out, and I am OCD enough that I put it in order by section of the store. I have a few new recipes to try, and some pretty fun things in store for the weekend. Can you believe school is almost out?? Hadley thrives in school, I’m really going to have to step it up over the summer and keep her academics going. Plus I’m so ready to get back in the pool every day! And I am very ready for Brent to have a break, this has been a rough semester with him taking 16 hours. I also went out to the lot yesterday, and the stem walls were poured and up, and the foreman said the plumbing is scheduled to go in tomorrow. Which means the foundation should be poured next week! Eeek!! Hadley had her dress rehearsal last night for her performance tomorrow night, and it was so cute! The dance is adorable and she made sure she was right in front!! I can’t wait to watch her at the game. I think she is most excited about all the makeup she gets to wear, haha!

Tonight for dinner I’m grabbing a rotisserie chicken from the grocery store and we will have some yummy roasted vegetables with it. Quick and easy since I won’t have much prep time before my little monsters get hungry!
